We buy our steers from Foss Farms in Terrebonne, Oregon. They are raised on grass, and are free to roam. They are finished on grain for 45 days for optimum flavor and marbling
Our steers are processed by The Meating Place in Hillsboro by USDA standards. Custom cuts and wrap are available. After aging, our customers pick up their beef at the Meating Place.
There are two payments
After slaughter, steers are processed to remove head, viscera, skin, hooves, etc. The resulting Hanging weight is reported to us by The Meating Place. This weight is the basis for pricing.
After this the beef is aged and cut into steaks, chops, Brisket, ribs, ground beef, etc. This involves a reduction in weight due to processing and drying.
Last year an average Hanging weight at JK Ranch was 740 lbs.
